Leftover Turkey Recipes

I hope you plan the way I do, and make sure you have plenty of turkey left over after Thanksgiving so you can try some of these recipes! I know I’ve shared my favorites with you before (like green chile turkey enchiladas) so I thought I’d try and find some new ones for this year. I can’t wait!! These are from the National Turkey Federation.

Turkey Pot Pie

frozen vegetables for stew, cooked according to package directions:

1 1-pound package frozen peas, cooked according to package directions:

1 cup COOKED TURKEY, cut into 1/2-inch cubes:

2 cups non-fat turkey gravy:

1 12-oz jar (or leftover gravy from your meal)

dried parsley: 1 tablespoon

dried thyme: 1 teaspoon

dried rosemary, crushed: 1 teaspoon

salt: 1/2 teaspoon

pepper: 1/4 teaspoon

refrigerated pie crust, room temperature: 1

Drain any cooking liquid from stew vegetables and peas.

Add turkey cubes, gravy, herbs, salt and pepper to vegetables in oven-safe 2-quart cooking dish.

Unfold pie crust dough and place on top of dish, trimming edges to approximately 1 inch larger than dish; secure dough edges to dish. Make several 1-inch slits on crust to allow steam to escape.

Bake in preheated 400-degree F oven for 25-30 minutes or until crust is brown and mixture is hot and bubbly.

Turkey, Mandarin and Poppy Seed Salad

orange juice: 1/4 Cup

red wine vinegar: 1-1/2 Tablespoons

poppy seeds: 1-1/2 Teaspoons

olive oil: 1-1/2 Teaspoons

Dijon-style mustard: 1 Teaspoon

red leaf lettuce, washed, dried, chilled and torn: 5 Cups

baby spinach leaves, washed, dried, chilled and torn: 2 Cups

COOKED TURKEY BREAST, cut into 1/2-inch julienne: 1/2 Pound

mandarin oranges, drained: 1 Can (10-1/2 ounces)

orange zest: 1 Teaspoon

Dressing: In small bowl combine orange juice, vinegar, poppy seeds, oil, mustard and 1/8 teaspoon freshly ground black pepper. Set aside.

Salad: In large bowl toss together lettuce, spinach, turkey and oranges. Pour dressing over turkey mixture.

Garnish with orange zest and serve immediately.
