I am once again going to help with a Healthy Cooking School in Brownwood on Tuesday, April 22, 2014, from 6:00 - 8:00 p.m. at the Brown County Youth Fair Home Economics Building. The cost is $25 at the door and it includes food samples, a cookbook and goodie bag. Last year was our first year and I was really impressed with the good taste of the healthy recipes we had to share. This year I will be demonstrating this menu with Jacque Behrens, the FCS Extension Agent from McCulloch County and it is EXCELLENT!!

We will be making Asian lettuce wraps, orange cranberry rice, and grilled bananas. I’ll just share the main dish recipe today, but I liked the other items so well also I may share these another time. I will also be demonstrating this recipe at the Do Well, Be Well Diabetes Class series that I will have next month in Mason with Ann Scarth, our local Wesley Nurse- so call my office for details (325-347-6459 in Mason and 325-396-4787 in Menard) on either of these great opportunities! I’ll tell you more about the diabetes classes next week.

Asian Lettuce Wraps


Nonstick cooking spray

1 1/2 pounds ground turkey breast

1 1/2 cups shredded carrots

1 cucumber, peeled and diced

2 tablespoons rice vinegar

3 tablespoons reduced-sodium soy sauce

2 tablespoons honey

2 tablespoons minced fresh ginger root

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes

12 Bibb or Boston lettuce leaves

1/2 cup chopped green onions

1/3 cup sliced almonds, toasted

Serves 4.


1. In a large nonstick skillet coated with cooking spray, cook crumbled turkey until the cooking temperature reaches 165 degrees; drain and set aside.

2. In a small bowl, whisk the vinegar, soy sauce, honey, ginger, garlic powder, and red pepper flakes.

3. Add the cucumber and carrots to the meat, and stir in the sauce.

4. Cook until the vegetables are crisp/tender (just slightly cooked) and garnish wraps with green onion and toasted almonds.
