"Impossible" Buttermilk Pie

I saw this recipe just the other day, and since I already had some buttermilk on hand from a recent recipe experiment, I thought I’d try it. It’s quick, easy, and tastes good!


Cooking spray for pie plate

1 1/3

1 cup buttermilk

½ cup biscuit mix (like Bisquick)


1 teaspoon vanilla

3 large eggs

Confectioner’s sugar and/or cocoa powder for topping (optional)


Preheat oven to 350 degrees

Coat a 9 inch pie plate with cooking spray

Combine all ingredients (except Confectioner’s sugar and cocoa powder) in a blender and process until smooth. Pour into prepared pie plate and bake until slightly browned and still a little jiggly; about 35 minutes. The pie will set as it cools off. Let it cool for about 10 minutes. Sprinkle the Confectioner’s sugar and or cocoa powder over the top; slice and eat while still slightly warm.
