I was visiting with my mom last night and I shared with her some simple salads I make for dinner when my husband is out of town. She is newly single and wanting ideas for healthy meals for one, since she doesn’t want to cook for just herself. Growing up, we often had something for dinner we called "Mexican Chef Salad." To make an easy version for one, I simply top my salad greens (remember, the darker, the healthier) with any leftover hamburger I might have, some canned or leftover beans, chopped tomato, shredded cheese and some Catalina salad dressing. Hot sauce is good on this too, along with a few fritos or tortilla chips. If you have an avocado or green onions add those in too.
I know my mother in law often grills or fries some chicken strips and uses them to top a salad. She uses Ken’s Steakhouse honey mustard dressing. This is just as good as it is in the restaurant!
Another salad I make often is topped with dried cranberries, toasted nuts, and raspberry vinegarette.
A chef salad with tomatoes, cheese, chopped up lunchmeat, and ranch dressing is also a favorite.
Try to keep the dressing light and you’ll have an easy, healthy meal fast!
